24 Dec

What’s not to like about dried cranberries, oatmeal, and white chocolate all rolled together into one delicious cookie?  These are soft, chewy, and irresistible!  Also very easy to make!

2/3 cup butter or margarine, softened

2/3 cup brown sugar

2 eggs

1 1/2 cups old fashioned oats

1 1/2 cups all purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 1/4 cups dried cranberries

2/3 cups white chocolate chips

Preheat oven to 375 degrees.  Beat butter or margarine and sugars together until light and fluffy.

Add eggs to the creamed mixture and beat until well mixed.

Add salt and baking soda and blend until well mixed.

Add flour and oats and mix well.

Stir in cranberries and white chocolate chips.

Place mounded spoonfuls of cookie dough on a lightly greased baking sheet.  Bake at 375 degrees for 10-12 minutes until lightly browned and set.  Cool on a wire rack.  Enjoy!
